Cupcake and Brownie Burgers

So it was Independence Day the other week, but since it was a Thursday, we decided to have a BBQ on Saturday to celebrate! I live in the UK, so it didn't make much difference!

Any time we hold a party here, I immediately plan the food on Pinterest. For this party, I found these cupcake burgers by Bakerella. I. Fell. In. Love. I just had to make them!



So I did! And let me tell you...they were possibly the cutest things I have ever made! I thoroughly enjoyed baking them!



I definitely used boxed cake and brownie mix for this!

Here's how you make them:

1. Bake 1 box of white cake mix in a cupcake tin

2. Bake 1 box of brownie mix

3. Once the cupcakes are cooled, cut them in half

4. Cut rounds into the brownies

5. Place the brownie rounds in between the cupcake halves

6. Divide 1 tub of vanilla icing into 3 bowls, with 1 of them having slightly more than the others.

7. Color one with red food coloring, one with yellow and one with green. Fill 3 ziplock bags with the icing, snip the corner off and squirt on top of the brownies.

8. Place the top cupcake half on top of the brownie. Brush water on the tops and sprinkle on sesame seeds.



Voila! Perfect and delicious cupcake burgers!

Easiest and Most Delicious Cinnamon Buns Ever!

Please don't be mad at me, but it's been A LONG time since I last wrote. It's been a mix of planning a wedding, getting married, finishing University, moving, getting a puppy, and all that jazz! I have been baking through all of this, just not documenting it!

However, I had to write about these EASY cinnamon buns I made! The dough was an absolute dream to knead. It was soft, warm, and it smelled deliciously yeasty!

They're in the oven as I write this, so I will tell you how delicious they are once I've tried them!

Okay. These are easily the BEST cinnamon buns I have ever made!! Even my husband loved them, and he never likes cinnamon buns!

Once risen! They are so pretty! 


Original Recipe

Buns
2 and 3/4 cup all-purpose (plain) flour
3 tablespoons white sugar
1 teaspoon salt
1 packet (2 1/4 teaspoons) instant dried yeast
1/2 cup of water
1/4 cup of milk
2 1/2 tablespoons butter
1 egg


Filling
3 tablespoons melted butter (I recommend using about 2 as it's a whole lot of butter and it's easier to cut when there is less)
1 1/2 tablespoons cinnamon
1/4 cup sugar

Glaze
1 cup powdered (icing) sugar
1 teaspoon vanilla extract (1/2 teaspoon vanilla paste)
3 tablespoons milk


1. Set aside 1/2 cup of flour. In a medium-sized bowl, mix together the remaining flour, sugar, salt and yeast.

2. Heat the water, milk and butter until hot. I microwaved it for 2 minutes and it was scorching hot. I was worried it would kill the yeast but it didn't!

3. Stir the butter mixture into the dry ingredients. Add the egg and some flour until the dough comes together and is not too sticky.

4. Shake some flour on your countertop and knead the dough for 5 minutes until it is smooth and not so sticky. Trust me. You'll enjoy kneading this warm, soft dough!

5. Place dough in a lightly greased bowl for 10 minutes to rest. No need to cover it!

6. Shake some more flour on your countertop and roll out your dough into a 8x14in rectangle.

7. Spread the butter all over the dough. Mix the cinnamon and sugar and sprinkle it all over! I love how it turns dark brown once it hits the butter!

8. Roll up the dough lengthwise and with a serrated knife, cut into 11 equal-sized pieces. I couldn't believe how easy this dough was to cut! i've never had such luck!

9. Place rolls, cut-side up, in a greased pie dish or baking tray of your choice. Cover loosely with aluminum foil and let rise for an hour in a draft-free, warm place. I turn my oven on to the lowest temperature while I'm making the dough, then turn it off while it's resting.

10. Bake in a 190C/375F degree oven for 15 minutes. Put the aluminum foil back on and bake for another 10 minutes.

11. When the buns are done, it's time to mix the powdered sugar, vanilla and milk together to form a thick glaze! Spread it over the buns and you will be one happy camper!




You know I had to get that middle bun! Yummy!!

Oops...

I have completely abandoned my blog for such a long time! I am so sorry! I have been so busy with schoolwork, volunteering, and trying not to spend so much money! Baking happens to be quite expensive at times...

I hope everyone is doing well! Maybe I'll do a bit of baking this summer whilst I have off! I have a whole list of things I want to do, such as painting, relearning the violin, and dancing on Just Dance 3! Love it!
