Cherry Chocolate Muffins

Have you heard of Herman the Cake? Mr. Sweets came home with a tub of Herman mixture, and I was to follow this cute recipe for 10 days and share the mixture with a 3 other people.

So Day 10 finally arrives, and I start to add the final ingredients. But guess what I forgot to do in Day 9? I forgot to divide the mixture up into 4 portions!! Since I'm not good at math, and I ran out of ingredients, oh and I don't have a humongous bowl, I had to throw poor Herman away.

But I wanted Mr. Sweets to have *something* to bring with him to work! We bought maraschino cherries and chocolate just for Herman because that's what Mr. Sweets wanted.

So muffins it was! Who doesn't love muffins?

Recipe from here!

  • 175g Self-Raising Flour
  • 50g Margarine
  • 50g Sugar
  • 2 Eggs
  • 4 Tablespoons Milk 
  • 1 Teaspoon Vanilla Extract
  • 200g Chocolate Chunks
  • 1 Little Tub of Marashino Cherries 

♥ Mix the flour and sugar in a bowl and make a well in the middle

♥ Mix the eggs, vanilla extract, milk and margarine in another bowl, then add to the flour mixture

♥ Stir all the ingredients until just combined. Over-mixing will make the muffins dry.

♥ I then mixed the cherries in a food processor because I don't like pieces of cherry in anything! But it's totally up to you!

♥ Add the cherries and chocolate and mix!

♥ Pour the muffins into a muffin tin and bake for 20 minutes at 200 C/ 400 F!

These were very delicious! Mr. Sweets really loved them!

Broo-sket-ta. Yes, that's the correct pronunciation, unfortunately! I grew up thinking it was Broo-shet-ta! Then I went to Italy, and I was very wrong!

Bruschetta is one of the easiest, most delicious side dishes ever. If you haven't tried it yet, please do! It goes with any Italian dish, and it's definitely a must-have.

If you haven't noticed, it's super easy with very few ingredients! Just take some French or Italian bread, fry it in oil and butter on both sides, add some chopped tomatoes and basil, and you're set!

This was my best bruschetta recipe yet! Normally I brown the bread with olive oil in the oven, then add the tomatoes and basil. But I watched Julie & Julia, and her genius plan was to fry it in a pan on the stove with butter as well as olive oil! Brill! I happened to have Garlic Olive Oil, so I used that, because bruschetta usually has garlic too!

Taco Thursday

Happy Almost-The-End-Of-The-Week!! Woo! I hope you all have some fun plans this weekend! For me, it's my birthday on Saturday! Eep! I'll be 26 years old. In other words, I'll be 4 years away from 30. Goodness me.  When did I get this old?? I keep saying to myself that age is just a number, and I'm thankful I've gotten to live another year!

So one night, I was talking to Mr. Sweets about Tacos, and how delicious they are. Do you know what he said to me?

He has *never* had a taco! I guess growing up in Arizona, you always have Mexican food. But he's English, and their Mexican food isn't the greatest, even though they are fairly close to Spain. 

So I got the ingredients and made a taco station, with vegetarian mince meat, of course! I was so excited and I thought they were delicious.

But you know what Mr. Sweets said? 

They taste like cardboard. 


Well, I actually understand that because the taco shells were a little stale. Failure for him, win for me!

Next on the list in Mexican food? Enchiladas! They are always a hit with Mr. Sweets!

Motivation to Cook and Bake

Hi everyone! Do you go through times where you're not as motivated to do something you were once passionate about? If so, what makes you get back on track?

Since Mr. Sweets had off for a few weeks, I haven't been in the mood to cook as much or bake! In the past month, I've baked a cheesecake, cakepops, cookies, and muffins. That. is. it. Okay, so it works out to about one dessert per week, but still! Haha!

Help me! Help me find the motivation and the passion to start cooking and baking more!! What dishes and desserts should I start out with?? Please make them easy :)
