My Red Velvet Cupcake Adventure

Let me take you through a journey...

A Red Velvet Cupcake journey.

Now, back in August 2010, I made my cousin, Frankie, who passed away last February, some Red Velvet Cupcakes while he was in the ICU. Mind you, they were made from a Betty Crocker box, but this is what started me on my love for baking cupcakes, and he loved them!

When I moved back to England, I attempted these wonderful American treats, and guess what?? I used an *entire* bottle of red food coloring and they still didn't turn red! How upsetting!

The other day, I decided to try again. This time, with red food PASTE!

Look at my little pretty red cupcakes!!!! I love you, my little red wonders!!

Not only that, but I figured out my oven temperature and voila! My cupcakes are nice and flat!! Perfecto!

Yeah, I'm a bit nuts. Now enjoy my picture!! :)

They look great every trip to the USA I always say I'll try some Red Velvet and never do, perhaps I need to make my own, although I will need a dairy & egg free recipe any suggestions?

Hey!! Sorry for the late reply!! You definitely should try to make these! But to be honest, I don't know much about baking without dairy! I would definitely google it because I'm sure someone has tried it! :)
